There is a difference in polling and storing ...

You can poll every minute if you want (assuming your system can handle
the load) however MRTG will still store in five minute intervals.

Moving to RRDtool may help as this does not consume as much resources
as rateup does.  I've been running a monitoring process every 10 seconds
and this was no problem ...
