I think the documentation in the distribution (including pointers to
MRTG's home) does reasonably well.

But to summarize what I think it says, the .log file (and its backup, the
.old file) has at its top the most recent observation, and below that an
entry for every data point in the graphs, which are re-generated every 
time MRTG runs (typically, every five minutes).
