OK, here we go:

1) It is possible to gather the in/out traffic of all servers you want,
assuming that SNMP is configured on them.

2) ...but MRTG (with rateup, the default grapher) can ONLY graph 2 lines on
a same graph. The solution is RRDTTOL. You can graph as many lines as you
want, or stacked bars or .... Just check the examples at :
http://people.ee.ethz.ch/~oetiker/webtools/rrdtool/gallery/

Some are quite interesting....

The bad news is that RRDTOOL is not as straightforward as MRTG.... good
