You may have 'withzeroes' in your config, remove it.

If you use 'unknaszero' this will make all unknown values to be 0 (zero), if
you remove it then the last value will be logged.

This is what I have on my options line for pingprobe...
gauge, nopercent, unknaszero, integer, growright

You need to create a new script for each device as you would with MRTG
