The package that I use MailScannner, www.mailscanner.info, actually has a
contrib of a complete MRTG monitoring config for viruses and spams "caught"
and complete email usage.
I use some perl scripts I wrote myself.

But seriously.......it would be nice to know whether anybody has managed to
put together graphing for emails processes and spam/viruses rejected.
I have set up a handful of mail servers / spam control using various
products. Statistics of emails processed were often a requirement and
visual aid to illustrate the efficacy (or indiscrimate rejection) of spam
management systems would be a good selling tool (or eye opener).
