I got apache-mrtg working on my system, now I can monitor 10 different items
per web server, though the instructions and README leave something to be
desired (i'm going to do a better writeup and send it back to the author of
apache-mrtg). Here is the URL if anyone else is interested (requires that
and ExtendedStatus On be enabled in httpd.conf).

Hope this helps someone else (i'll try to get updated docs and configs
to the author sometime in the next 10 days or so, as it was kind of
hard to figure stuff out from the README).
