You want it to subtract the previous value, so you do not use gauge. So far
so good.

But MRTG will divide by interval (eg 300 secs) to arrive at the RATE, and
not the DIFFERENCE

I suspect that your difference is too low, and anything under 1 per second
is lost
Use Perminute to get around this.
