[mrtg] Graph not plotting, once my traffic goes above 562mbps

The figures (~560Mbps with 1min interval) would suggest you are suffering
from counter wrap and the short counters wrapping in the 1min interval.

 

Change to using SNMPv2 and the 64bit counters and all should be OK.

 

To do this, append ':::::2' to the end of the Target definitions (no spaces)
