Just use a text editor and place an hash in front of the definitions. You could, for instance, stop monitoring the dialup interfaces and only monitor the ethernet interface(s) to see total traffic. There probably are some interfaces already commented out in your mrtg.cfg file, mimic this for the other interfaces. Be smart: monitor either all or none of the dialup interfaces.
