Well, it depends on what you're doing. I like to use 1 rrd if I know the
group of data I'm collecting is not going to change, IE: Disk usage in
megs and free space in megs would go hand in hand, so no need for
seperate RRDs, but I'd have a seperate RRD for each partition, because I
may get a new partition in the future and need to collect more data. I
have 1 rrd for each CPU in a multi cpu system, but each CPU rrd has
several DSs for that CPU...

It's a matter of preference and flexibility.
