Thanks Simon and Alex,
I'm doing this now:
            DEF:a1=mimedefang.rrd:ok:AVERAGE \
            CDEF:a=a1,60,* \
            GPRINT:a:AVERAGE:" Now\:%02.0lf email/m\n" \

but my "Y" scale have jumped to 1600+, and I don't receive 1600 emails 
per minute.
But the gprint prints correctly "11 email/m", that makes sence
