By giving those characters to rrdtool, not to bash.

This is a simple case of escaping characters from bash.  It also
has nothing to do with rrdtool.

Try surrounding the line with single or double quotes.  Also make
sure you learn why this would help and when it is necessary. There's
plenty of information to be found, in the bash manual, on internet,
or in a book about shell programming perhaps.
