It is easy to go from 30 RRD files to 31 RRD files.
It is not that easy to go from 30 DSes to 31 DSes.

Generally speaking, you use DSes to monitor stuff that belongs together, 
such as interface in and out. And generally speaking you use different 
databases for different interfaces.  Using your case as an example, I would 
probably use one RRD per email address, each having two counters, for 
incoming and outgoing messages.
