Most likely it will be january 1st, 1970. If so, you are not running the newest release of rrdtool. Somewhere between 0.99 and 1.0 a bug was introduced that made the start of an rrd file default to 1970 in stead of now. If above is not true, please mail me the exact actions you do and I'll try to reproduce the problem.
