This approach might work for you, presuming what you want is to graph 
number of pop clients and number of messages retrieved per 5 minute interval:

0. check the contrib directory to make sure it hasn't already been 
done;  use the code there if it has
1. presuming logcheck is NOT running on your mail system, invoke logtail 
from the logcheck package to isolate the data for just the current 
reporting period
2. use a slightly modified contrib/mqueue to process the data from step 1

I think you are on to a very useful graph.  If you get the code running, 
please post - I'd like to use it;  If you don't get a better suggestion, 
email me privately and I'll give it a try.
