You can certainly do that, but you can not do it more often than 5 minute intervals with just MRTG.  You need 
RRDTool to accomplish this.  If you go to RRDTool, you can certainly to it, but the time interval needs to be 
defined during the creation of the database.

Hello,

I am wondering if there is way that I could changed or customize the
standard polling intervals (ie. 5 minutes) of the graph, to make it a
more refinined graph. I guess what I am looking for is a selectable time
interval that the user would specify and the graph would be generated
with given time point. I am fairly new to the advance features of MRTG
so any help would be greatly appreciated.
