512MB of RAM is enough for few hundreds of targets.
What operating system do you use?
What hardware. Important are Harddisk type, speed (7200RPM ATA100...), 
processor speed.
Do you use MRTG with RRDTool?

For MRTG with RRDTool is not critical processor speed.
If you use forks, you can limit number of forks to some small number.
Fast SCSI harddisk (10000RPM) is very useful.
