One thing you can do is to poll at the (default) interval of 5 mins
(300 sec) and just multiply the retrieved data by 300.  This will give
you the number of emails sent/received per 'interval'.  Clunky, but
it works.

and maybe pay particular attention to the section
"Multi Target Syntax".  It got me started on mathematical operations
in mrtg.

Can you point me to some relevant links, I know for sure, I wont be
doing
300 over 5 minutes, no where close to that.

I certainly will :-) I am just addicted to this thing now, working on a
way
to MRTG how many cigarettes I smoke per day :-)

Yeah, constantly amazing me the results I get in google and what people
