Thanks Takumi, someone replied to me in an email about an hour before
you. I didn't try it that way because that's the way I did it
originally, before I loaded the mib. It just didn't occur to me to try
it once more!
So I gave it a shot and it works fine. Weird how the long target
doesn't work with a loaded mib but the short does - but I'll take it.

Add
LoadMIBs: /usr/share/snmp/mibs/UCD-SNMP-MIB.txt
and rewrite your target as:
Target[server-disk_used]: dskAvail.1&dskAvail.1:community at server
it works fine.
I confirmed that your 'long target' does not work, dunno why.
