Yes. 

In fact, MRTG will graph anything it can collect data for.  You probably are referring to the cfgmaker program, which will generate a MRTG configuration file for you and by default will comment out definitions for inactive interfaces.  

Check the cfgmaker documentation, particularly the --if-filter and --nodown options, for more details.

Is there a way to specify which interfaces MRTG graphs? Currently, it
only seems to work on eth0, but I would also like it to monitor ppp0,
which is the interface of a PPTP to the server. However this interface
is not always available (off when there is no PPTP connection).
