Be very careful about running MRTG in a virtual environment; you can experience clock skew which can seriously impact calculations of data transfer rates. If you use 5min polling (not 1min), and your virtual environment is not heavily loaded, and you have good time synchronisation, you will probably be OK, but a physical server will never have the problem.
You can also get performance issues when using virtual disks due to the amount of IO required if you have large numbers of Targets (use RRDTool 1.4.x in daemon mode to avoid much of this)
