You mean: if min-value is 50 and max-value is 100:
0 to 50 transparent and 50 to 100 colored?

That should be done by using an AREA without a color, followed by STACK:

DEF:ds0_min=/path/to/rrd:ds0:MIN
DEF:ds0_avg=/path/to/rrd:ds0:AVERAGE
DEF:ds0_max=/path/to/rrd:ds0:MAX
AREA:ds0_min
STACK:ds0_max#00CC00

> c.) plot the average inbound value in (b.) in a different colour on the

You have to use a line here, or else you will always overlay the minimum.

LINE1:ds0_avg#003300:" In bytes"
