Unless performance is a big issue, it usually is better to create
new databases.  You can combine data from multiple databases in
the same report.

Unused data is not in the way so why remove it.  Just don't use
it if you do not need it.

If you really want to alter existing RRD files, try googling
for "add ds" or "rrdtool add ds".
