Hi All,
After a few more hours of frustration I worked it out ... had problems in a
few areas. I've posted my resolution below so that other users with the same
problems as me can hopefully get something useful out of this!
1 - Final working config for telnetIOSping looks like this:

I'm not sure if the above is 100% how it should be, but it works. Although
the routers are setup to resolve DNS names, I though I'd cut down one more
step for the router and use the IP address.
2 - Set up your routers correctly! I re-read the info supplied on the Telnet
IOS Probe page
(http://people.ee.ethz.ch/~oetiker/webtools/smokeping/probes/telnetiosping.e
n.html) and made some minor changes to my routers!
