The question is: will the spike go away if I don't run MRTG during that
time.  It depends.  For short enough intervals, MRTG will cope with the
outage.  The huge data transfer might be spread out over a longer time
interval but might still be there.

If the pause is long enough, MRTG will not graph the data.  You can use
"unknaszero" to show zeros during the unknown interval.

Another option for you to try:  create a second config file.  Alter the
maxbytes value (and the absmax, if any) to a very low value.  Use this
config file during the night.  During the rest of the day, use the normal
config file.  Doing it this way means that MRTG can continue polling the
device (therefore nothing strange will happen) while you can make it skip
those huge values.
